Texas-style beef brisket is a flavorful and tender dish that's often associated with slow smoking over wood for an authentic taste.
Ingredients:
- 1 whole beef brisket, approximately 10-12 pounds
 - 2 tablespoons kosher salt
 - 2 tablespoons black pepper, coarsely ground
 - 1 tablespoon paprika
 - 1 tablespoon garlic powder
 - 1 tablespoon onion powder
 - 1 tablespoon chili powder
 - 1 teaspoon cayenne pepper (adjust to taste)
 - Wood chunks or chips for smoking (oak or mesquite are traditional choices)
 - Mop sauce or apple cider vinegar (optional)

Instructions:
1. Prepare the Brisket:
- Trim excess fat from the brisket, leaving about 1/4 inch on the fat cap side. This helps the brisket absorb more smoke flavor.
 - Mix the salt, black pepper, paprika, garlic powder, onion powder, chili powder, and cayenne pepper in a bowl to create the rub.

2. Apply the Rub:
- Rub the spice mixture evenly over the brisket, ensuring good coverage on all sides. Allow the brisket to sit at room temperature for about 1 hour to let the flavors penetrate.

3. Prepare the Smoker:
- Preheat your smoker to 225°F (107°C). Use wood chunks or chips for smoking. Oak and mesquite are popular choices in Texas for an authentic flavor.

4. Smoke the Brisket:
- Place the brisket, fat side up, on the smoker grates. Close the lid and let it smoke.
 - Maintain a consistent temperature of 225°F (107°C) throughout the cooking process.
 - Smoke the brisket for about 1.5 to 2 hours per pound, or until the internal temperature reaches around 195-205°F (91-96°C).

5. Mop Sauce (Optional):
- Some pitmasters like to mop the brisket with a vinegar-based mop sauce during smoking to keep it moist. This step is optional but can add extra flavor.

6. Rest the Brisket:
- Once the brisket reaches the desired internal temperature, remove it from the smoker and wrap it in butcher paper or aluminum foil.
 - Let the brisket rest for at least 1 hour to allow the juices to redistribute.

7. Slice and Serve:
- Slice the brisket against the grain for maximum tenderness. The bark (outer crust) is highly prized for its smoky flavor and texture.

Serve your Texas-style beef brisket with traditional sides like
coleslaw, pickles, and white bread. Enjoy the rich, smoky flavors that
are characteristic of authentic Texas barbecue!
